Ingredients
For the Fritters
1 large sweet potato
1 tbs grated ginger
1 flax egg (1 tbs ground flax seeds + 2 ½ tbs water)
¼ cup + 1 tbs Flour
1 tbs honey or agave nectar
1 tbs tapioca starch
½ tsp ground cinnamon
½ tsp ground nutmeg
1 pinch salt (plus more for garnish)
coconut oil for frying
For the Pickle
2 large cucumber (peeled and diced finely)
¼ cup chopped parsley
½ medium onion chopped
1 small scotch bonnet pepper chopped (optional)
juice of 1 lime
salt & pepper to taste
For the Dip
1 cup cooked field peas
1 cup spinach
1 medium onion chopped
1 tsp bajan seasoning
½ cup parsley chopped
1 small hot pepper deseeded and diced (optional)
1 tbs lime juice
¼ tsp paprika
¼ tsp cumin
¼ tsp garlic powder
salt and pepper to taste
olive oil for blending
Method
Step 1
Wash, peel and grate the sweet potato into a bowl using a box grater. Grate your ginger into the bowl and add flax egg, flour, tapioca starch, cinnamon, nutmeg and salt. Combine the mixture well and refrigerate for 15-30 minutes.
Step 2
Heat oil over a medium heat till about 350F. While the oil is heating, begin shaping the potato mixture into patties rough ½ inch thick. Fry the fritters in hot oil until brown (2-3 mins each side) and drain on a paper towel when finished. Season immediately with additional salt while still hot.
Step 3
Add diced cucumbers, chopped onions, scotch bonnet pepper, parsley, lime juice, salt and pepper to a bowl. Combine the ingredients well and refrigerate for at least 30 min before serving. Step 4 Boil peas in unsalted water until peas are tender. Drain peas and place them into your food processor or blender along with all the other ingredients. Process the ingredients until the desired consistency is achieved; some prefer chunkier textures while others appreciate smoother blends. Use olive oil, a tablespoon at a time to help process the mixture.
